Storing live fresh crab

If possible you should eat your live crabs as soon as you buy them. Unfortunately storing them live can be difficult and they are infamous for dying quickly. One good way is to place them in a cooler box with ice on the bottom. Make sure the crabs don’t have any contact with the ice or are not lying directly on it either. Allow for fresh air to get in but be cautious that the crabs can’t climb out.

 

How To Prepare A Live Crab

It’s best to make a crab dead before cooking as it creates a superior taste and texture and it’s also the most humane way which causes the least amount of suffering if done the right way. Placing the crab direct into boiling water or pouring it over will frequently cause it’s limbs to fall off and cause undue suffering. Not ensuring the crab is dead before cooking will often cause the meat to be tough and also watery as the flesh can easily be exposed to the boiling water.

This procedure for a live fresh Crab is easier than you think. Firstly make sure the claws are tied or put some heavy rubber kitchen gloves on. Turn the crab onto its back and find the pointed flap on its underside. If you lift this up and insert a screwdriver through this spot until it hits the topside of the shell. It’s then a good idea to twist the screwdriver and pull it quickly with force toward the back of the shell. Once you turn the crab the right way up again you can let it drain.

It’s highly recommended not to place them in fresh water as this will be a slow and unpleasant death of about 30 minutes.

 

Cleaning the crabs

It’s vitally important to clean them both outside and inside before cooking and allow the fresh crab to get to room temperature. To clean the outside shell use a hand scrubbing brush with some force. Remember to clean the fresh crab legs and crab claws as well. Removing the insides is best done by removing both the top side of the shell and then the triangle shape abdomen flap on the crab’s underside. It’s possible then to scoop out the internal organs but keep the crab legs intact.
